Some photographing tips to work by:
Lighting is the key - take photos on a clear, sunny day - mid morning or late afternoon. Mid-day gives off too harsh a light for realistic colors. Flash lighting will also change the colors somewhat.
Get down to your subject's level. Horses, dogs or cats - try to have the camera lens level with their backs. Sometimes your subject can be put on a table so the camera isn't near the ground. Avoid poses straight at the nose or eyes. 3/4 view is the best with side profiles coming in second.
Take photos that show off your animal's personal characteristics. Take a photo of the pose you would like to have done. Then take a few photos of different poses and from various angles. Sometimes the angle the client likes does not always draw out very well and the pose would need to be adjusted.

Here is a much better picture of same dog in a different light. Shows more true color and detail. A much better picture for doing a very realistic drawing or painting.
